"Baked Apples and Apricots"
========================================Granny Smith Apples are an excellent choice for baking in this dish. The apricots are full of nutritional value. But, remember to choose without preservatives for those who are allergic to sulfites.
- 4 Cored Granny Smith Apples
- 7 to 8 dried chopped Apricots
- 1/3 cup chopped dates and/or raisins
- 2 Tbs Brown Sugar
- 1 tsp cinnamon
- 1/4 tsp cardamon
- 2/3 cup apple juice
Combine chopped fruit, brown sugar and spices. Spoon fruit into center of apples. Pour apple juice over fruit. Bake 40 minutes in 350 degree oven. Place each apple into an individual serving dish.
Optional: Top with Non-Dairy topping or Mix remaining cooking juices with 1/2 cup vanilla yogurt and pour over each apple. Sprinkle with a little cinnamon-sugar.Yield: 4 servings
