HEALTHY RECIPE-OF-THE-MONTH
* Pasta Salad - Hot or Cold

- 12 ounces fettuccine (may substitue other types pasta)
- 4 cups broccoli florets
- 2 cups julienned sweet yellow peppers
- 1 cup sliced onions (sweet or purple)
- 4 teaspoons olive oil
- 1 cup sliced black olives
- 1 teaspoon dried oregano
- 1 teaspoon ground black pepper
- 4 tablespoons grated parmesan cheese
1. Boil the fettuccine for five minutes, then add the broccoli and boil for five minutes more. Drain and keep warm.
2. Meanwhile, sauté the peppers and onions in the oil over medium heat for five minutes, or until limp. Add the olives, oregano and black pepper. Cook for two minutes.
3. Toss the pasta and vegetables, and sprinkle with the parmesan.
Special note: For serving cold, use your favorite shape macaroni-type pasta. Experiment! Add your favorite veggies or dressing and enjoy!
