RECIPE in the News/June 2006Twice-Baked Sweet Potatoes
======================================== 4 sweet potatoes 1/8 cup brown sugar 1/4 cup raisins 1/8 cup orange juice concentrate 1 teaspoon cinnamon 1/2 teaspoon ginger 1 orange, chopped garnish: 8 half-orange slices1. Bake sweet potatoes at 375° F. for about 1 hour, or until cooked through.
2. When cool enough to handle, slice potatoes in half lengthwise. Carefully hollow out insides into medium-sized bowl, leaving walls about 1/4 inch thick.
3. Mash potatoes, and add all remaining ingredients except garnish. Fill mixture into hollowed-out shells. Return to oven for 15 minutes or until heated through; garnish and serve.
Yield: 4 to 6 servings
