* Pineapple Sweet Potato

  2 large sweet potatoes, baked-then mashed
  6 tablespoons egg substitute
  1/4 cup brown sugar substitute
  2 tablespoons high fiber cereal crumbs
  8 ounces crushed pineapple in juice

1. Lightly spray toaster oven baking dish with nonfat cooking spray.

2. Combine mashed sweet potatoes, egg substitute, sugar, and pineapple in baking dish and mix until blended.

3. Sprinkle top with cereal crumbs and bake in 350 degree toaster oven 40-45 minutes, until heated through.

Yield: 2 servings
