Holiday Leftover Casserole
==========================================Turkey, mashed potatoes, cheese, a special sauce, and some little extras combine to make a tasty casserole for "the day after." An absolutely delicious way to use those tasty Holiday leftovers.
- 3 tablespoons butter (substitue: nut/seed oil or margerine)
- 2 tablespoons all-purpose flour
- 1 (5 ounce) can evaporated milk (substitue: soy milk)
- 1 cup cold water
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon onion powder or flakes
- 1 cup cooked, diced turkey meat (substitute: soy meat or other veggies)
- 1 cup shredded Cheddar cheese (substitute: Soy cheese)
- 2 cups leftover mashed potatoes
- 2 tablespoons butter
- 1 cup finely crushed herb-seasoned dry bread stuffing mix
1. Preheat oven to 350 degrees F (175 degrees C).
2. To Make Sauce: Melt 3 tablespoons butter in a saucepan over low heat. Add flour and stir until mixed. Slowly stir in evaporated milk and water, then season with salt, pepper, and onion powder/flakes. Stir over low heat for 5 minutes; remove from heat.
3. Place turkey in a lightly greased 9 inch by 13 inch baking dish. Pour sauce over turkey, then sprinkle with Cheddar cheese. Spread mashed potatoes over cheese. Melt 2 tablespoons butter and add to stuffing mix; sprinkle stuffing over top of casserole.
4. Bake, uncovered, in the preheated oven for 45 minutes.
